Under the Sun Bakery Mona & Jeff BeverProducts: Baked Goods- Sweet breads, cookies, cakes, pies, muffins Mona and Jeff Bever have been serving up baked goods to customers at Farmers Market at Minnetrista for six years. They "love to bake and create," so the couple opened Under the Sun Bakery five years ago. Mona and Jeff are known for their lovely specialty cakes, but inside Farmers Market, they like to keep things simple by selling dozens of no bake and old fashioned cookies, including chocolate chip and snickerdoodle, as well as an array of other baked goods that could make you salivate while walking by the couple's booth.
If you buy a fresh pie from Mona and Jeff, you may be surprised that it tastes like an old family recipe. "We have people tell us that it tastes like what their Grandmas used to make," says Mona. But don't be fooled! Under the Sun Bakery uses canola oil, a healthy substitute for all that lard Grandma put in her pies. While laughing, Mona adds, "We try to have an assortment of healthy and not-so-healthy products." Additionally, Mona and Jeff support peers by using products from other vendors at Farmers Market at Minnetrista. They rely on Judy Truax, owner of Prairie Blossom Farms, for their honey supply. The couple uses the fresh supply to make their scrumptious honey banana bread. For these two, it's about the customers. Mona and Jeff want people to enjoy their products. "It's not just a sale," Mona says. "It's a friendly atmosphere. We are like one big family We enjoy getting to know the people." These friendly folks would be more than happy to sell you some of their lovely baked goods, and because of the care they put into their products, you're waistline will surely will find (some) of the treats friendlier than your grandma's.
